EASY POTATOES IN FOIL RECIPE

INGREDIENTS:


  • 3 tablespoons olive oil
  • Juice of one lemon
  • Kosher salt and freshly ground black pepper, to flavor
  • 2 kilos infant pink potatoes, halved
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 2 tablespoons chopped chives

DIRECTIONS:


  1. Preheat oven to 400 stages F.
  2. In a small bowl, whisk collectively olive oil, garlic, thyme and lemon juice; season with salt and pepper, to flavor.
  3. Cut six sheets of foil, approximately 12-inches lengthy. Divide potatoes into 6 identical quantities, approximately 1 cup per foil packet, and upload to the middle of every foil in a single layer.
  4. Fold up all four facets of each foil packet. Spoon the lemon aggregate over the potatoes. Fold the edges of the foil over the potatoes, masking completely and sealing the packets closed.
  5. Place foil packets in a unmarried layer on a baking sheet. Place into oven and bake till soft, about 15-20 minutes.*
  6. Serve immediately, garnished with chives, if desired.

NOTES:
*Cooking time will range depending on the dimensions and thickness of the potatoes.
