FROZEN STRAWBERRY CHEESECAKE PIE ( No sugar ,Low Carb )

Ingredients

Crust

  • three tablespoons butter melted
  • three/4 cup shredded coconut I used reduced fats
  • 1/four teaspoon salt
  • three/four cup uncooked sunflower seeds
  • 1/four cup Swerve sweetener or 1 tablespoon powdered stevia

Filling

  • 2 cups sliced strawberries
  • 1/4 teaspoon salt
  • 1-half teaspoons lemon juice
  • 1 eight ounce mild cream cheese, softened
  • 1 cup heavy cream
  • 1 teaspoon liquid lemon stevia
  • half teaspoon vanilla liquid stevia

Instructions


  1. In a food processor grind the sunflower seeds, coconut, erythritol or stevia and salt together till great crumbs.
  2. Slowly pour in melted butter and manner until blended.
  3. Press aggregate into the bottom and up sides of a 9 inch pie plate then set aside.
  4. In a blender, add strawberries, lemon juice, salt and liquid stevia.
  5. Blend until pureed. Taste and alter sweetener if wished.Set apart.
  6. In a stand mixer, whip cream cheese till smooth with no clumps.
  7. Pour in heavy cream and vanilla stevia and mix on excessive until whipped.
  8. Pour the pureed strawberries into the whipped cream cheese mixture and mix until integrated nicely.
  9. Pour combination into pie crust, cowl and freeze for 4 hours or in a single day.
