RANCH POTATOES WITH PARMESAN FROM AN INSTANT POT

Ingredients


  • 2 lbs purple potatoes
  • ½ teaspoon salt
  • ½ cup water
  • 1 1oz packet of ranch seasoning/salad blend
  • 1 cup Parmesan cheese, shredded
  • ½ cup low sodium fowl broth

Instructions


  1. Scrub potatoes and cut into chunks of approximately 1 inch each.
  2. Place potatoes to Instant Pot and upload water and chicken broth. Mix in ranch seasoning and salt.
  3. Secure lid and make sure vent is on sealing. Use manual/strain prepare dinner placing for 7 mins. When cycle is entire, do brief release and dispose of lid.
  4. Add Parmesan cheese, ¼ cup at a time stir until melted. Repeat till all cheese is used.
