12 complete New Potatoes (or Other Small Round Potatoes)
three Tablespoons Olive Oil
Rosemary (or Other Herbs Of Choice) To Taste
Parmesan, Finely Grated
INSTRUCTIONS
Preheat the oven to 450 ranges.
Bring a pot of salted water to a boil. Add in as many potatoes as you desire to make and cook them until they are fork-tender.
Drizzle a sheet pan with olive oil. Place tender potatoes on the sheet pan, leaving masses of room among every potato.
With a potato masher, gently press down every potato until it slightly mashes, then push the excess out of the masher returned on top of the potatoes. Rotate the potato masher ninety ranges and mash once more, pushing out the extra. Drizzle the tops of each beaten potato generously with more olive oil.
Sprinkle potatoes with kosher salt, clean floor black pepper and clean chopped rosemary (or chives or thyme or whatever herb you have available.) Add grated Parmesan.
Bake in a 450 degree oven for 20-25 mins till golden brown and scorching.
